I usually cook 4 cups a week so I get newly cooked rice on the 1st day and just reheat the rest of the week. So to keep things exciting, I tried to look for fried rice recipes. I’ve always been amazed by vegetable fried rice so this time, I cooked Bok Choy Fried Rice.

Overall, a good dish. I think I might have overcooked the Bok Choy but still yummy, nevertheless.
Bok Choy Fried Rice
Yield 2 servings
Inspired by Pepper Bowl
Ingredients
- 1 bunch Bok Choy, washed and chopped
- 2 tablespoons olive oil
- 1 teaspoon sesame seeds
- 6 cloves garlic, minced
- 2 cups cooked old rice
- salt to taste
Instructions
- Heat olive oil in a wok.
- Add sesame seeds and garlic until aromatic.
- Add Bok Choy and continue to saute in high heat for 3-5 minutes.
- Add cooked rice and salt and cook until ingredients are well-blended.
- Serve and enjoy!
